now that we are using the SQL connector, can we modify the rights to the CommitCRM share (or file/folder rights) to lock down access? We take all these steps to limit access to certain things inside CommitCRM but the reality is that (smart) techs can simply access the data directly through the share... (!)

This is something that will hopefully will be included in the coming RangerMSP 5.6 release... (still being tested) Stay tuned.
